Types of chocolate Bars:
These days the possibilities are endless to find the best chocolate. Whether it is your local supermarket, gourmet store, our website, or even a specialty chocolate shop chances are they will carry a wide assortment of different chocolate bars including the Marsatta Caramel/Macadamia Bar or the 89 Bar! Dark chocolate-
Dark or plain chocolate is made from cocoa (not less than 35%) and is found in a paste, powder, or butter. It is not uncommon to find higher percentage cocoa nowadays.
Our Marsatta Thin contains 72% cocoa! The Thin has the perfect profile for those chocolate connoisseurs who enjoy a rich but pleasant chocolate taste. A higher percentage chocolate (greater than 72%) is not a common flavor profile but we do make it and it tastes great! In the list of ingredients just remember:
With the greater amount of cocoa the chocolate bar has then the less sugar the bar will have to. And of course the higher the percentage of cocoa, the stronger and more intense the chocolate will taste. This does not necessarily mean bitterness or earthiness, since some cocoa bean varieties are very mild and not bitter at all. In fact, because these chocolates contain less sugar, they are less sweet, allowing the chocolate flavor to dominate. Our 89 Bar is a testament to this great taste!

Milk Chocolate-
Milk chocolate is an intermediate formula between dark and white chocolate, containing cocoa (not less than 25%), whole milk powder, cocoa butter, sugar, vanilla (or vanillin), and lecithin.
For your milk chocolate craving may we suggest our Marsatta Milk Caramel/Macadamia Bar with a balanced taste, rich in cocoa, and prominent hints of caramel. It truly has a personality all of its own!
White Chocolate-
White chocolate is different from both the dark and milk chocolates as cocoa liquor is not used in the preparation. The ingredients used in white chocolate comprise of cocoa butter, sugar and milk powder. The flavor of the white chocolate is also defined by the proportions of the ingredients that can result in a sweet, a creamy or a caramel-flavored product. To legally have the right to a white chocolate designation in the US, the production must have a minimum of 20% cocoa butter. Our White Chocolate bon-bons are made by request only.

HEALTH BENEFITS: Cacao contains a wide array of unique properties and minerals,
including high levels of sulfur and magnesium. It may increase your focus and alertness and
contains nutrients to keep you happy! Chocolate and cacao are often associated with love.
All this is due to the phenyl ethylamine contained in cacao. Anandamide can be produced
in the brain when we are feeling great, cacao makes anandamide stay around longer!
Cacao may seem to diminish your appetite, perhaps due to its MAO inhibitors (monoamine
oxidase enzyme inhibitors). Cacao's rare MAO inhibitors may allow serotonin and additional
neurotransmitters to circulate in the brain. It also may facilitate youthening and rejuvenation,
according to some.
RECIPE IDEAS: These cacao nibs taste like real chocolate. Some use a sweetener like raw
organic agave nectar when preparing the chocolate treat recipes. A great chocolate dairy
free shake consists of water, cacao, agave nectar, ice and macadamia nuts. Blend cacao with
water and agave or yacon syrup until smooth. Next add ice and quickly blend to crush ice
into a slushy.
