That reputation did not come from cacao itself. It came from shortcuts.

I make 100% chocolate because cacao deserves better than that story.

How It Happened

This chocolate was not planned.

We did not set out to discover a 100% chocolate that was not bitter. There was no intention to reinvent anything. No pursuit of a talking point.

Something simply happened along the way.

We noticed the result before we understood it. The edges were softer. The bitterness never arrived, and the astringency just wasn’t there. What should have been aggressive was calm. Balanced.

Chocolate has a way of revealing itself if you let it.

Some discoveries are better respected than explained. So we make it now with intention, but we allow the mystery to stay where it belongs. In the chocolate.

How We Make It

Great chocolate is not created at the end of the process. It is earned at the beginning.

It starts with cacao selection. Origin matters. Fermentation matters. Drying matters. If cacao is rushed, under fermented, or scorched early, no amount of sugar or extra fat will save it later.

We roast gently and deliberately, not to dominate the cacao but to reveal it. Acidity softens. Aromatics wake up. Natural notes come forward. Fruit. Earth. Warmth. Depth.

Then we grind. And we grind longer than most people are willing to. Time is expensive, but bitterness is more expensive.

Long refining breaks down sharp edges. It smooths texture. It allows the cacao butter already inside the bean to do its job naturally.

That is the difference most people never taste. Most people have never had chocolate made this way.

Why We Make It

I did not set out to make a 100% bar to impress anyone.

I made it because I was tired of hearing people say, “I don’t like dark chocolate,” when what they really meant was, “I don’t like bad chocolate.”

When cacao is treated with respect, it does not need sugar to be palatable. It does not need vanilla to be interesting. We save those ingredients for different bars. It does not need masking.

It needs patience. Discipline. And restraint.

This bar is for people who want to taste cacao the way wine drinkers taste grapes. Not sweet. Not bitter. Just honest.

Why Ours Is Different

Many chocolate makers add extra cacao butter to their 100% bars. There is nothing illegal about that. Sometimes it is done for texture or flow. Often it is used to soften rough cacao or hide aggressive bitterness.

We do not do that.

Our 100% chocolate contains only the cacao butter that naturally exists in the bean. The mouthfeel, balance, and finish come entirely from how the cacao was handled, not from added fat.

It is a harder path. It leaves no room for error.

But when done right, the result is something most people do not expect.
